Romaine & Mandarin Salad
- 1 head romaine lettuce
- few leaves iceberg lettuce
- 4 green onions, chopped
- 1 cup celery, chopped (optional)
- 1/4 cup bacon bits
- 1/2 cup croutons
- 1 tin mandarin oranges (drained)
- 1/2 cup sliced almonds
- 1 1/3 tbsp sugar
Dressing:
- 1/4 cup cooking oil
- 2 tbsp sugar
- 2 tbsp vinegar
- 1 tbsp parsley
- salt
- pepper
Combine lettuce, green onions, celery, parsley and oranges. In small frying pan, fry sugar and almonds on medium heat, turning constantly until golden brown. Break apart. Sprinkle on top of salad along with bacon bits and croutons.
Add dressing just before serving and toss.
