- 1 3/4 cups flour
- 1/4 tsp salt
- 2 tsp baking powder
- 1/2 cup shortening
- 1 cup sugar
- 1 egg
- 1/2 tsp vanilla
- 3/4 cup milk
- 1 cup partridgeberries (fresh or frozen)
Preheat oven to 350. Grease and flour a loaf pan.
Sift together flour, salt and baking powder. Cream shortening; beat in sugar, then egg and vanilla until light and fluffy. Add sifted ingredients to creamed mixture alternately with milk. Turn into prepared pan and sprinkle with sugar.
Bake in preheated oven for 55 - 60 minutes or until cake springs back lightly when touched. Cool 5 minutes in pan, then remove and place on cake rack.
You can also use blueberries instead of partridgeberries.
