Baked Rice Pudding
- 3 eggs
- 2 cups milk
- 1/2 cup sugar
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 2 1/2 cups cooked rice
- 1/4 cup raisins
In large bowl, beat eggs; blend in milk, sugar, vanilla and cinnamon. Stir in rice and raisins. Pour mixture into a lightly greased 9 inch (2L) round baking dish.
Bake at 325 for 45 - 50 minutes or until edges are puffed and center is almost set. Let stand 20 minutes before serving.
