Potato Chocolate Cake
- 1 cup butter, softened
- 2 cups sugar
- 2 eggs
- 1 cup cold mashed potatoes (leftovers are fine)
- 1 tsp vanilla
- 2 cups flour
- 1/4 cup cocoa
- 1 tsp baking soda
- 1 cup milk
- 1 cut nuts (optional)
Cream butter and sugar until fluffy. Add eggs, one at a time, beating well after each one. Blend in potatoes and vanilla. Combine flour, cocoa and baking soda. Add alternately with milk, blending well after each addition. Stir in nuts. Pour into a greased 9 x 13 inch pan.
Bake at 350 for 40 - 45 minutes until done.
Cool on wire rack.
