Enchiladas

Sauce:

  • 1 tbsp oil
  • 1 tbsp flour
  • 2 small cans enchilada sauce
  • 2 cups chicken broth
  • 1/2 tsp salt

In large pan over medium heat, add oil and flour and whisk together to make a paste, cook for 1 minute. Pour in enchilada sauce, chicken broth and salt. Bring to a boil, reduce heat and simmer for 30 minutes.

Meat:

  • 1 1/2 lbs ground beef
  • 1 onion diced
  • 1/2 tsp salt

Cook ground beef.

Tortillas:

  • 10-14 corn tortillas
  • 1/2 cup oil

Fry tortillas for 3 seconds per side, drain on paper towels.

Assembly:

  • sauce
  • meat
  • tortillas
  • 3 cups grated cheddar cheese
  • 1 cup green onions

Preheat oven to 350º. Spread 1/2 cup sauce in 9x15 baking dish. To assemble each enchilada, dip a tortilla into the sauce, spoon meat, cheese & green onions in center, roll up and place in dish. Fill dish, pour remaining sauce over the top, cover with grated cheese & green onions.

Bake for 20 minutes.
